The name of Dassai's sake uses numbers to represent the steps of rice polishing. "Two-thirds" means that only 23% of the most essential part of each grain of rice is used for brewing. It is dripping with glycol and has a fragrant fruity aroma.

Asahi Shuzo, located in Yamaguchi Prefecture, was founded in 1947. The place where the brewery is located is named "Tagotsu".
River otters will arrange the caught fish and shells on the shore, which is like a festival. The former president, Mr. Hiroshi Sakurai, unexpectedly took over the business from his father, faced various bankruptcies, and was not favored by Doshi, with no one willing to make wine for him.

All process steps are recorded, and special data analysis positions are set up to store and track various data such as temperature and proportions, and make continuous adjustments. In addition, Asahi Shuzo only uses Yamada Nishiki, the king of sake rice. Only high-quality brewing companies recognized by farmers will have the opportunity to obtain "Yamada Nishiki". Asahi Shuzo has also delved into the technology of grinding rice. All its wines use rice cores with a polishing step of less than 50, starting with Dassai 50, then finely milled into three-quarters, then finely milled into two-thirds, and finally to Yuanxin. The separation is divided into three parts and nine parts, and finally the distance is separated into two parts and three parts.
