When discussing Chardonnay white wines, one inevitably thinks of the renowned villages and vineyards of France's Bourgogne region. These include Chablis in the north, celebrated for its mineral notes, then moving south to the esteemed Meursault, Puligny-Montrachet, Chassagne-Montrachet. The Grand Cru and Premier Cru vineyards in these areas produce many exceptional wines, though they come with a hefty price tag. For under $200, consider the Pouilly-Fuissé appellation, situated west of the city of Mâcon, which also specialises in Chardonnay. Pouilly-Fuissé is an AOC designation, though geographically it encompasses the villages of Pouilly and Fuissé, with Chaintré and Vergisson also included within this appellation. Unlike the prestigious regions mentioned earlier, however, Pouilly-Fuissé does not participate in the classification system and thus lacks Premier Cru or Grand Cru vineyards. The profile of Pouilly-Fuissé. Benefiting from ample sunshine and excellent ripening conditions, the grapes yield rich fruitiness. The soil imparts mineral notes, while smoky and nutty flavours derive from oak ageing. Over the past two decades, numerous wines of remarkable aromatic complexity and ageing potential have emerged, particularly those crafted from older vines, whose quality rivals the finest offerings from other Burgundy appellations.

David Fagot now owns four hectares of vines in the village of Solutré-Pouilly, producing wines from the Pouilly-Fuissé, Saint-Pouilly and Mâcon-Pouilly appellations. Since establishing his estate in November 2000, David has sought to highlight the terroir characteristics of Chardonnay and the Mâconnais region within his wines, capturing their rich and complex essence. Through environmentally conscious practices, treatments are applied only where essential for vine health. This encompasses non-mechanised cultivation, mechanical and chemical weed control in the vineyard, alongside optimal pruning and selective suppression of secondary shoots – all aimed at limiting yields. Temperature-controlled, slow fermentation constitutes the final stage in determining each plot's quality expression, developed through meticulous vineyard work.
