It is brewed using the extremely rare "Snow Goddess" sake rice with a polished rice ratio of 48%. It has a fresh floral and fruity aroma, a sweet and transparent taste, and a smooth texture. The sake has also obtained the "GI Yamagata" certification, which means that the water, raw rice, and inherited technology are all produced in Yamagata Prefecture, which is proof of its high evaluation.
【Wine Rice- "Snow Goddess"】
Yamagata Prefecture has been developing this sake rice since 2001, and it is also the prefecture's first variety specifically for brewing Daiginjo sake. This variety has a mesophyte maturity period, with short stalks and high lodging resistance. Its thousand-grain weight is about 26.9 grams, which is slightly heavier than "Dewa Sanchan" by about 1 gram. Snow Goddess's heart white (the white part of the rice core) has a high discovery rate and a small size, making it suitable for rice polishing to less than 50%.

Dewazakura Sake Brewery was founded in 1892 and is located in the small town of Tendo City, Yamagata Prefecture. However, in the basin surrounded by high mountains, the temperature continues to exceed 30 degrees in the summer, and the snow is more than 1 meter thick in the winter. Such climate and terroir have made it a major producing area of rice, fruits, etc. The ancestor of the founder of the Nakano family was a large landowner who owned vast fields. Since the beginning of our business, we have insisted on quality first and continuously produced high-quality wines. The company has been producing Ginjo sake for many years.

The company focuses on using manual brewing as the main force to connect the entire brewing process, and has been accepting successors from breweries across the country as trainees since 1986, allowing the hand-brewing technology to be passed down and developed. It is an important role in the brewing industry. Dewa Sakura Brewery can be said to be a pioneer in Ginjo sake brewing. It was the first to start selling "Sakura Ginjo sake" in 1980, and the success of the product created the "Ginjo sake brewing craze."

The current president, Mr. Masumi Nakano, adheres to the family's philosophy of "the president participates in brewing" and personally creates a "President's Oginjo sake" every year. President Nakano has won the "Tokyo University of Agriculture Business Award" and is also the president of the Yamagata Sake Brewery Association, a visiting professor at Tokyo University of Agriculture, a special ambassador, and a part-time lecturer at the Graduate School of the University of Tokyo. He has a high status in the sake industry.
