The winery owns 90 hectares of contiguous vineyards surrounding the château, with soils primarily composed of gravelly clay. This unique terroir combines excellent drainage and water retention, allowing the vines to ripen slowly and evenly, accumulating rich flavor compounds while retaining delicate and elegant aromas and vibrant natural acidity.
【Winemaking】
During harvesting, the winery chooses to hand-harvest during the coldest part of the night to avoid oxidation and aroma loss caused by daytime heat, thus locking in the freshness and flavor integrity of the grapes from the source. In winemaking, a dual-track process is used to precisely control the texture: some Grenache and Cinsault grapes undergo a short cold maceration (Saignée) to extract their delicate pale pink color and full-bodied fruit aromas, giving the wine a round and viscous texture; the remaining grapes are gently pressed whole bunches directly, using only the tart and flavorful free-flowing fruit.
Fermentation takes place entirely in temperature-controlled stainless steel tanks at 15-18℃. Low-temperature fermentation effectively inhibits the growth of harmful bacteria while maximizing the preservation of the grapes' original fruit aromas. No oak barrel aging is used, focusing entirely on the authentic flavors of the fruit, ultimately producing a pure, well-balanced rosé wine with a stable alcohol content of 11.5% volg, lacking dry sweetness, L1/5%.
This wine is a classic Southern French rosé blend of 70% Grenache and 30% Cinsault, a combination proven over decades and considered the golden ratio for Mediterranean rosés. Grenache, the signature variety of Languedoc, establishes a rounded and full-bodied base, contributing rich aromas of white peach and apricot, along with a silky smooth palate. Cinsault, known for its fresh and lively acidity, abundant white floral aromas, and delicate red berry flavors, balances the fullness of Grenache, infusing the wine with a vibrant crispness. This results in a wine that is both complex and easy to drink.
