Tasting Notes: Fresh and fruity lemon andgreen apple aromas with dried orange zest and hazelnut nutty. Ripe on thepalate, it retains a subtle mineral saltiness. Chablis is characterized by avery chalky and stony aroma. This wine can be drunk now, but also has thepotential to age for a few years. It has the consistent elegance and richnessof Burgundy.


The history of the winery is integratedwith the revival of the Chablis vineyards. Olivier's father Jean-Pierre Triconand his uncle Claude planted their first vines in 1972. They subsequentlyacquired several parcels of land, culminating in a 13-hectare estate. TheVaurou farm, located in the Chablis Heights, was mainly used for vinecultivation at that time. The Chablis 1er Cru Montmains vineyard has a famousKimmerdgian-clay-limestone terroir. The average age of the vines is 35 yearsand covers an area of only 1.2 hectares.
The current owner, Olivier Tricorn, is alsoa builder, and he knows that a stable building can only be built on a solidfoundation. Beginning as a simple vineyard worker on his father's estate, hehas maintained a deep respect for the generations before him. In 1998 hepurchased Domaine de Vauroux and continued to develop the estate. 35 years ofwork is reflected in all the soul Olivier Tricon instills in each of hiscuvées. After harvest, the grapes are taken to the cellar and sorted topreserve their aroma and taste potential. Gentle pressing extracts the bestessence from the fruit. Most fermentation takes place in stainless steel vats.Olivier Tricon's goal is to ensure that his wines have the greatest aromaticelegance. Over the years, it has acquired a powerful tool for modern work. Fromharvest to bottling, strict hygiene requirements ensure that each cuvée tastesat the highest level.


There are 40 Premier Crus in the ChablisAOC, producing full-bodied wines with ripe fruit flavours. There are only sevenGrand Gru, which are located in the middle of the Chablis AOC, on the hillsideon the right bank of the Serein River. Due to the high content of shellfishfossils in the soil of the Grand Cru, the wines of the Chablis Grand Cru have amore prominent mineral taste and savory taste, with a concentrated taste andexcellent aging potential.
The Chablis Premier Cru appellationincludes 79 sites dedicated to wine production. They are divided into 40climates (climats) that can appear on the label, of which 17 are called flagclimates, and Montmains is one of them. Wines produced in adjacent climaticzones can use the name of the climatic zone from which they originated.
This appellation is located in thesouthwest of the town of Chablis, Montmains comes from the word"Montméen", the name Chablis Premier Cru Montmains refers to themedium-sized valley below the two surrounding peaks, covering a total of about118 hectares. As a flag climate, Montmains includes itself as well as theclimates of Butteaux and Forêts. This narrow climate enjoys more early morningsun and wind, Montmains is colder than other climates, and grapes in this areaare harvested later than usual.

Geologically, this climate is characterizedby marl, sometimes lumpy under clay. On the surface, these clays are mostlylight, sometimes brown or dark red. Domaine Besson estate on 1er Cru Montmainsplot of 5 hectares with clay/limestone soil. The wines from this region arevibrant and fresh, with a clear, slightly closed palate when young. They openup after 3 years and continue to show complexity 10 years later. Wines fromMontmains themselves tend to be more structured, mineral and elegant, whileretaining fresh acidity. Of the many iconic climates, Montmains is definitelythe easiest to drink.
