In a copper distiller, copper ions will dissociate during the distillation process. The dissociated copper ion will grab sulfur-containing compounds during the distillation process, so that some highly volatile sulfur-containing compounds will be adsorbed on the inner wall of the copper distiller and will not be distilled out. These sulfur-containing compounds usually have a pungent and pungent odor, and even make people feel a smelly odor.
Distillation in a pot distiller is a very complicated process. It needs to be distilled batch by batch, and the distillation efficiency is relatively low. To obtain very pure high-concentration distilled spirits, two or more distillation processes are required. Spirits have a lower alcohol content, but have more aromas.
EDMUNDO London Dry Gin produced a pure, aromatic, round, sweet and fruity gin flavor after going through seven classical copper pot distillers.
(London Dry Gin)
At present, most of the gins on the market belong to London Dry Gin, which usually use grains, sugar cane or molasses as raw materials, and then add a variety of spice based on juniper berries to the liquor base. "Dry" means that the flavor is not sweet, which is quite different from the sweeter Dutch gin. "London Gin" is basically a type of wine, which only restricts the production process and has nothing to do with where the gin is produced.
