Chardonnay is harvested from a vineyard called "L'Epicea" in the south. You can already feel the full ripeness of the grapes in the mouth, with white flowers, spices, and herbs. The mouth has tropical fruit aromas such as pineapple, vanilla, and very obvious butter. It tastes creamy and a little creamy, with a mineral salty aroma. I asked the owner where the butter flavor comes from? The owner replied that it is because the fruit is fully ripe, and aging in old wooden barrels will also add a butter flavor to the wine. This Blanc de Blancs Champagne is made from the finest Chardonnay grapes from "L'Epicéa", the sunniest site in the domain. This vine has been planted for over 50 years and provides rich, healthy and ripe Chardonnay grapes every year. And the yields offered are very low to maintain their quality.
Tasting Notes: The Champagne is bright and clear in appearance, with a deep lemon yellow color and light silvery reflections in the glass. It is formed from fine and lively bubbles that create long-lasting bubbles. It smells of smoke and iodized limestone, typical of our limestone-limestone soil, mixed with notes of lemon, fresh hazelnut and white peach. Buttery and nutty flavors are apparent upon first exposure to air. The mouthfeel is soft and fresh, with a creamy, melty effervescence. Champagne offers sweet and crispy fruity flavors with tangy citric acidity.

It holds a unique position in the Champagne region as one of the historic estates that still exists today, with 28 hectares of contiguous vineyards producing Champagne. This time, the wine kid was lucky enough to take advantage of the owner of Edouard Duval to come to Hong Kong and participate in the wine tasting party held by the winery.
