Many people enjoy French brandy, such as Hennessy, Rémy Martin, and Martell, which are quite well-known. However, outside of France, Spanish brandy is generally considered among the best. Some Spanish brandy is made from sherry, originating in the late 19th century. The aging process for Spanish brandy made with sherry is unique and, like the sherry itself, is called "solera." Compared to French brandy, Spanish brandy is noticeably sweeter and has an earthy flavor, making it a very good choice!
FUNDADOR, founded in 1730, was the first Spanish brandy producer. Its sherry was exclusively for the Queen of England. It boasts the world's largest sherry cellar and is globally renowned for producing expensive "sherry casks."
Region

The Fendero vineyards are located in Jerez, where the soil is chalky albariza, rich in calcium carbonate. This albariza soil acts like a sponge, trapping rainwater and nourishing the soil. Its proximity to the sea also helps maintain humidity, protecting the air from hot, dry easterly winds. The Airen and Palomino grapes used for winemaking thrive in Jerez's unique soil. Careful attention is paid during harvest to prevent damage to the fruit, and good ventilation is maintained before pressing. The pressed juice is fermented into white wine, then classified and sent to the Solera system for its remarkable aging process.
Regarding winemaking and distillation

Fendero brandy utilizes the "Sorela" system for aging sherry, where barrels are stacked according to their age, with the oldest barrels placed at the bottom, called "solera," and the younger barrels above them called "criadera." During bottling, the bottom layer of brandy is removed, and then topped with brandy from the upper layers. This system is unique to the Jerez region, blending young and old brandy to revitalize the aged spirit.
