Distillery



Highland Park, located in Orkney, Scotland, is the world's northernmost whisky distillery. Its long history of distilling dates back to the 18th century, making it one of Scotland's oldest distilleries.


Highland Park was founded in 1798, one of a number of unlicensed distilleries operating on Orkney Island. In 1826, under the supervision of Robert Borwick, Highland Park obtained a license to distill whisky. In 1895, James Grant of Glenlivet Distillery purchased Highland Park, and three years later, he added two more stills, increasing its production. Under Grant's management, Highland Park flourished, attracting the attention of Highland Distillers, which acquired it in 1937.


In 1979, Highland Distillers established the Highland Park single malt whisky brand, which became a huge success. Highland Park evolved with the times, adding a visitor center in 1986 to further enhance the distillery's revenue. In 1999, The Edrington Group Limited and William Grant & Sons acquired Highland Park Distillers and undertook a major renovation of the distillery and visitor center. Under the new ownership, Highland Park continued to grow and produce a portfolio of exceptional whiskies.


Region


Highland Park is located on Kirkwall, a small, isolated island in the Orkney archipelago. The harsh weather and winds blowing from all sides make it difficult for trees to survive, yet this has contributed to the unique style of Highland Park whisky. For over 200 years, from the 18th century to the present, Highland Park has adhered to five cornerstones of its production process to ensure the whisky's complex and unique flavor.


Distillation


Firstly, Highland Park is one of the few distilleries that still uses hand-turned malt. Because the budding process generates abundant heat, Highland Park insists on hand-turning the malt every eight hours to ensure good air circulation and the perfect humidity level (5%).

Secondly, the distillery hand-collects peat from the banks of Hobbister Moor, just 1,100 meters from the distillery. This peat is over 9,000 years old, buried nearly four meters deep, and composed of layers of compacted vegetation. Because the island lacks trees, the peat here is woodless but rich in heather. The combustion of this peat produces complex floral aromas, which give Highland Park whisky its intense and balanced smoky sweetness.

Third, Highland Park insists on using sherry oak casks for aging. Highland Park selects oak from both American and European sources, ships it to Spain to be made into casks, and then fills them with Oloroso Sherry for two years of aging. These casks are then returned to Orkney to age Highland Park whisky. Sherry oak casks are crucial to the flavor of Highland Park whisky, contributing 80% of its flavor. Sherry oak casks also determine the quality of the whisky, which is why the distillery insists on using expensive sherry casks for aging.

Fourth, the unique geographical location of Orkney Island gives Highland Park whisky its balanced taste. The Highland Park distillery is located near the Arctic Circle, yet the climate is exceptionally mild, with summer highs of just 16°C and winter lows of 2°C. This long-term, uniformly cool climate is ideal for aging the island's whisky.

Finally, Highland Park insists on re-blending whiskies from different casks before bottling to create a rich, balanced, and long-lasting whisky. This is one of the reasons why Highland Park whisky stands out.

Highland Park 21 Year Old 2019 Release – Selected from just 36 premium casks, including ex-bourbon hogsheads, first-fill sherry-seasoned European and American oak casks, and unique ex-Rioja casks, this malt was matured for 21 years from vintages 2001 and earlier, showcasing exceptional balance and depth of flavor. Highland Park is renowned for its peat character, symbolizing the wildness and elegance of the North Sea.
