Izumibashi Shuzo is particularly good at brewing junmai sake using the "raw sake brewing" method. In a nutshell, "sake brewed with raw sake" refers to the traditional brewing method using natural lactic acid bacteria. Compared with sake made using "quick brewed sake", it has a richer flavor and more lively acidity. The wine has fruity aromas of honeydew melon and sweet orange. In addition, the sake is specially aged for two years to achieve a good balance between the right flavor and refreshing taste. In addition to cold drinks, warm drinks (burning wine) are also highly recommended. In terms of food pairing, officials recommend pairing it with fish rich in oil, duck liver or even Peking duck.
【Izumashi Brewery】
Izumibashi Brewery, located in Kanagawa Prefecture, was founded in the fourth year of Ansei (1857) and has a long history of more than 165 years. At first, the main business was the cultivation of edible rice. Later, in 1996, it officially started to cultivate sake rice. In 2016, it was registered as a "Cultivation Shozozo", which is a sake brewery that handles everything from agricultural production to liquor brewing. Currently, the sake brewery is built on the Ebina Farmland, one of the few barn areas in the prefecture, and the sake is brewed using the moist and plump sake rice cultivated in the rich natural environment and the water flowing from the Tanzawa Mountains.
The sake brewery's characteristic "red dragonfly" logo comes from the image of dragonflies flying in the fields near the brewery. From the sake brewery, you can overlook the Tanzawa Mountains such as Oyama, which local residents rely on, and there are rich mineral springs at the foot of the mountain. The sake brewed by Izumibashi Shuzo using this high-hardness submerged water, which is rare in Japan, has a refreshing and mellow taste. It can be tasted even more delicious when paired with food.
