[One of the kings of sake in Yamagata Prefecture, the king of unfiltered raw sake - Eiko Fuji]
In Yamagata Prefecture in northeastern Japan, where there are many sake breweries, Eiko Fuji ranks third. Fuji Sake Brewery is located in the Oyama area of Tsuruoka City, Yamagata Prefecture in northeastern Japan. It is one of the sake breweries with a long history. Founded in 1778, it has a history of over 240 years. It was originally named "Fuji Sake Brewery". In 1964, in order to meet the booming development of Japan's economy and sake industry, it was decided to add "Eiko" to the brand, and thus "Eiko Fuji" was established. It is said that the family is descended from Kato Kiyomasa, a historical figure from the Warring States Period in Japan. Yamagata Prefecture is one of the prefectures in Japan where competition for sake brewing is the most intense, with famous brands such as Juyondaime, Kudoki Uete, and Hideho. The current president, Yukiyoshi Kato, took over the management of the brewery in 2005. In response to market demands and the problems faced by the entire sake industry, he re-examined the direction and positioning of the brewery, improved the quality of raw materials and storage, and developed new product lines. Among them, the unfiltered raw sake is the most popular new product, which retains the freshest flavor of sake in the liquor. The "Eiko Fuji" product series is generally full of fruity aroma, refreshing and smooth in the mouth, and full of the sweet flavor of ripe fruits.
The brewery's motto is "Always brewing more delicious Japanese sake"; the Japanese sake brewed since its establishment has continuously surpassed the industry and improved its quality. Eiko Fuji is often listed in the top five on the authoritative Japanese sake website SAKETIME. They are good at using "Yamagata No. 10 Yeast" to brew beautiful sake with a long aftertaste! In recent years, Eiko Fuji has been good at launching unfiltered raw sake. "Unfiltered" means that it has not been treated with activated carbon during the filtration process, "raw sake" means that it has not been sterilized by fire, and "raw sake" means that no brewing water is added to dilute the wine before bottling. Therefore, the freshest and most original flavor can be retained in the wine. Unfiltered raw sake has become a very popular sake in Japan and even abroad.
