Tasting Note：With the theme of the sea in spring and the mist on the sea surface as the main axis, this wine is a charmingly cloudy light wine. After opening the bottle, it releases an aroma of apples. When poured into a glass, the slightly cloudy white wine is like cherry blossom petals falling. On the palate, you can feel the micro-bubbles and tropical fruit flavors. The clear acidity is pleasant and leaves a refreshing finish.

【Sake Brewery】

Founded in 1883 in Sanbu City, Chiba Prefecture, Kankiku Sake Brewery is located in Kujukuri Hamaka, just steps from the Pacific Ocean. The brewery is dedicated to achieving the ultimate in "freshness," with the vast majority of its brews being shipped as "unfiltered raw sake," showcasing an amazingly juicy fruit aroma accompanied by a light, subtle carbonation. Among them, the "Ocean 99" and "Discovery" series, reflecting seasonal aesthetics, perfectly blend the seaside terroir of Kujukuri Hamaka with modern design, making Kankiku highly sought after by modern sake enthusiasts.

【Sake Making】

Chiba Prefecture's "Kankiku Meijo" sake series enjoys immense popularity both domestically and internationally, consistently ranking highly within the prefecture and a regular in the "SAKETIME National Rankings" Top 10, making it one of the most sought-after and popular breweries in recent years. "OCEAN99" is Kankiku's annual limited-edition brewing series, themed around different seasonal landscapes. This "Nagi Spring Misty" is themed around the mist swirling over the calm sea in spring.

This year's "Spring Misty" is brewed using Hokkaido's new generation sake rice, "Kitashizuku," a cross between the renowned "Omachi" and the Hokkaido-grown "Ginpu." Registered as a superior variety in 2008, this rice produces a well-balanced sake. Upon opening, it releases a subtle aroma of Ginjo sake. On the palate, it offers a delicate sweetness, a rich texture from the lees with a touch of bubblyness, a refreshing style, a mild rice flavor, moderate acidity, and a clean finish. It's a fine sake with a perfect balance of sweetness and umami. It pairs well with chilled drinks and various dishes such as seafood, sashimi, grilled, or charred dishes.
