Yucho Sake Brewery, located in Nara Prefecture, Japan, boasts a 300-year history. Its main vintage brands are "Takacho" and "Kaze no Mori." "Takacho" is a family name passed down through generations, representing the brewery's heritage and evolution, and carries the flavor passed down through generations. "Kaze no Mori," created by the 13th generation brewer, Yoshihiko Yamamoto, possesses a strong personal style and is a typical example of a modern brew. Sourced from "Kaze no Mori," the birthplace of Japan's finest rice cultivation, this sake breaks with traditional brewing methods. It utilizes "ultra-hard water" and modern technology for temperature control and extraction (ice-bound and sieve-bound) to deliver the best flavor to all customers. The resulting sake boasts a fuller, fresher fruit aroma, and its soft, light character makes it a perfect match for both Western and modern Japanese cuisine.

To ensure that every "Kaze no Mori" that consumers purchase is close to the state of freshly brewed and pressed, Yucho Sake Brewery not only uses the Bodaimoto from Seirekuji Temple in Nara Prefecture for brewing, but also spent several years developing patented technologies such as "Gagari-ori" and "Hyō-ori"!
