Chateau Cos d'Estournel is the most famous winery in the village of St-Estephe in Bordeaux, France. It is located on a gravel hill called "Cos (from the local dialect)" at the southern end of the village, so it becomes part of the name of the winery. The "d'Estournel" in the wine name comes from Louis-Gaspard d'Estournel, the owner of the winery in the early 19th century. In order to brew the good wine he wanted and the most unique winery architecture in Bordeaux, this romantic legend once He was forced to sell the winery twice; however, the reputation he built allowed the winery to be classified as a second-class winery in 1855. It has the reputation of "Saint Estephe Wine King", and the unique oriental-style label building , remains a remarkable landmark to this day. Since the 1960s, Cos d'Estournel has always been the most expensive wine in the village of St-Estephe, and is known as one of the "super second wineries" of Haut-Médoc! The winery was also listed as one of Robert Parker's 155 greatest wineries in the world.

The old vines of Chateau Cos d'Estournel are an important part of the estate's heritage. They are not only the source of the character of the estate's wines, but also form the core of the blend. Despite low yields and high maintenance costs, retaining some old vines is still a necessary option. At the same time, for the future of the manor, selecting and breeding the best old vines is also a priority, which can inject fresh blood into the vineyard. We select the branches based on the appearance and taste of the grapes for the cultivation of new vines. It is these new vines that will inherit the wealth of the old vines as carriers. This method is called "hybrid selection" and ensures that the plants will be passed down for generations to come, continuing the style of the wine. It represents a long-term commitment, starting with the selection of vines with the utmost care and then carefully cultivating the plants to the necessary age to produce fine wines.
For Chateau Cos d'Estournel, the protection of the estate's heritage is of paramount importance: every action is carried out with a holistic and long-term perspective, supported by the most sophisticated technologies. Whether in the vineyard or in the cellar, the winery team works as naturally as possible and optimizes its quality, although this has a real impact on time costs. To this end, the installation of gravity cellars allows the team to process the grape berries and grape juice in the most appropriate and gentle way, thus preserving the integrity of the fruit. This work, carried out in the cellar, fully demonstrates the complexity of Aistol's terroir. The winery has a history of more than two hundred years. For future generations, planning vineyards and protecting the environment from a long-term perspective has become an unshirkable responsibility.
