The best of the best needs a matching package. A square wooden box tied with a Japanese knot is opened to reveal the Kaga 12 Years. Aged for 12 years, the Kaga 12 brings you the ultimate in taste enjoyment. The aroma of ripe plums comes from the glass, and the wine is smooth and sweet, with a sweet plum flavour. 16% abv has been tamed by 12 years of ageing, making it almost impossible to detect any alcohol in the mouth. After swallowing, the plum flavour slowly fills the mouth without any tartness or greasiness, making you want to renew your glass again without realising it, and it is the kind of wine that you will drink half of the bottle if you are not careful. Benisashi Ume (Red Plum)
This is a high-class variety of the Hokuriku speciality, which is known as a ‘red enigma’ because of the red colour of the ripe fruit. The red plum contains more amino acids, which gives it a fresher flavour and a higher level of mellowness. Due to the difficulty of cultivation, only the same part of the branch bears fruit every three years, and the yield is smaller than that of ordinary varieties, making it even more valuable.

Kobori Brewery
The Kobori family's ancestors established their business in Hakusan during the Edo Kenpo period (early 1700s). In the late Edo period, the brewery began to manufacture sake, and in the middle of the Meiji period, the brand name was changed to ‘Manshou Raku’. Inheriting the tradition of Kaga Kiku Sake, the brewery still brews delicious sake by hand at Tsurukuraizo and Morinogin Brewery in the foothills of Hakusan, pursuing the highest quality of rice, water, and technology. In recent years, Hakusan has been recognised by the Japanese government as a property called ‘Hakusan’, where high quality sake and plum wine are brewed with the ‘fukurumi water of the Tetori-gawa River system in Hakusan’.
