still. When Jean Martell founded the winery, he paid special attention to the Borderies, which is the smallest and rarest grape producing area in the Cognac region. The grapes grown on the marginal silica clay soil give the eaux-de-vie a unique floral aroma and an exceptionally smooth taste. This unique terroir sets the tone for the elegance and refinement at the heart of the finest Martell Cognacs. Grapes ripened in the Cognac region are turned into clear white wine, which is then heated and boiled in copper stills and transformed into water of life. This is the process of distillation.
To ensure the purest taste, Martell uses traditional copper stills to heat the wine. As the boiling process progresses, the vapor rises to the top of the still, passes through the swan neck into the coils, condenses and forms a clear, warm liquor. Among the many outstanding Cognac wineries, only Martell distills clear wine to remove all sediments and impurities to produce extremely delicate and pure water of life with pure grape fruit aroma.
Martell insists on using only barrels made from close-grown oak, a unique feature that gives the eaux-de-vie a soft, balanced aroma, with notes of vanilla, dried fruits, red fruits, sweet and sour sauces and flowers.
Martell uses Tosset oak barrels. Tosset oak trees grow closely together, and each sapling receives less sunlight, which slows down its growth rate and causes the annual rings to be closer. The use of oak barrels with tighter growth rings gives the eaux-de-vie a softer and more delicate woody aroma.
