Terroir
Cognac is grown in the Charente region of France, near the Atlantic coast. The Cognac region itself is divided into six vineyard areas, or appellations. Grapes matured in the Cognac area are turned into clear white wine, which is transformed into eaux-de-vie after being heated and boiled in copper stills. This is the process of distillation.
To ensure authentic taste, Martell heats the wine in traditional copper stills. As the boil progresses, the vapors rise to the top of the still, where they pass through the swan neck into the coils where they condense and form a clear, warm liquor. Among the many outstanding cognac wineries, only Martell distills clear wine after removing all sediments and impurities to produce extremely fine and pure eaux-de-vie, presenting pure grape fruit aroma.

The eaux-de-vie sleep in the dark, quiet Martell cellar. Day after day, month after month, year after year. A wonderful transformation is taking place. Oak is alive, giving the eaux-de-vie body and beautiful amber color, and helping the eau-de-vie to release its unique aroma.
Martell insists on using only casks made of densely ringed oak, which has the unique character of giving the eaux-de-vie a soft, balanced aroma of vanilla, dried and red fruits, sweet and sour sauce and flowers.
Martell uses Tossé oak barrels. Tossey oaks grow closely together, and each sapling receives less sunlight, thus slowing down the growth rate and resulting in tighter rings. Casks made of this denser-ringed oak give the eaux-de-vie a softer, more delicate woody aroma.
In addition to the choice of oak, the type of cask used also greatly affects the flavor of the eaux-de-vie. If new casks are used, it will give the wine a strong woody aroma; if the casks have been aged for eaux-de-vie before, the woody aroma will be lighter. The link that finally creates the main taste element is "roasting"-toasting the inside of the barrel with a slow fire, so that the various aromas inside the oak can be released. The more toasted the barrel, the more intense the aroma it emits. At Martell, the casks are simmered to preserve the flavor of the eaux-de-vie.
