Taste: Although the wine is labelled as extra dry, it is very dry, very fruity, with fruity flavours of pears and honeydew melon, and a slight acidity that makes the wine feel like it is cooling down! Generally speaking, Processco's sparkling wine is weak, but this Premium sparkling wine uses a more troublesome method to make the bubbles more delicate, and will be released to the market 2 months after bottling, to enhance the taste of the bubbles in the mouth, and there is indeed a feeling of vitality in the mouth ~ 
As this is a vintage Processco, it has a Yeast smell, with a toasted bread flavour and increased complexity. The finish has a softer feel to it. 
#Best with oysters and seafood: the right amount of bubbles brings out the freshness of the seafood, and the freshness of the wine is the perfect complement to the seafood!


Wine Cold Knowledge [Prosecco Sparkling Wine V.S. Champagne
Prosecco and Champagne are both sparkling wines, but the main difference is the method of secondary fermentation, which in the case of Prosecco is the Charmat Method (a.k.a. Metodo Italiano). The first step is to ferment the grapes into a white wine (base wine) as in the case of white wine, and then place the grapes, together with the yeast, into a special sealed stainless steel fermentation tank for a second fermentation. The carbon dioxide released during the fermentation slowly dissolves into the wine in the sealed tanks. After 25 to 60 days, when the second fermentation is complete, the Prosecco aerated wine is filtered under high pressure and put into bottles. In contrast, the secondary fermentation of Champagne, Méthode Champenoise, is carried out in the bottle for a maximum of half a year (or three years for vintage Champagnes) before being dégorgement using a special method that does not take into account the labour, cost and time involved. Prosecco retains the freshness and aroma of the grapes. In terms of sweetness, there are simply three types of Brut, Extra Dry and Dry, with Brut responding to today's international tastes and Dry being the traditional Prosecco style of sweetness.

In addition to this method of winemaking, the grapes used are also very different. Champagne is mainly made from Chardonnay, Pinot Noir and Pinot Meunier, whereas Prosecco is required by law to use a minimum of 85% Glera grapes, with a maximum of 15% from Verdiso, Perera, Bianchetta, Glera Lunga, and even Chardonnay and Pinot Noir. Unlike Champagne, which is all about toast and complexity, Prosecco is all about freshness, so unlike Champagne, there are very few vintage Prosecco wines on the market. This is a rare vintage of Prosecco, the 2016, which brings out the freshness of the Glera grape flavour, and a complexity that is almost Champagne-like!
