Specialties: In 1947, Paul "Pépère" started his own label and used Pinot Noir, the "king" grape variety from the Côte de Bar, in his first bottle. To celebrate our 70th anniversary, we've created this cuvée in tribute to Paul. From Soléra, launched in 2010, the Cuvée is fleshy, greedy and deep, retaining its finesse and freshness.
Taste: This is a delicious champagne with aromas of apple, walnut, apricot and pear. The bubbles in the mouth are fine and smooth, just like a delicious mousse, with fresh apples, walnuts, and almonds bursting on the tongue. Crispy toast, apple aromas, perfect as an aperitif with grilled meats or slightly aged cheeses.

Champagne is mainly made from three grapes: Chardonnay, Pinot Noir, and Pinot Meunier. The former are white grapes, while the latter two are black grapes! The two common champagnes, Blanc de Blancs and Blanc de Noirs, are classified by the color of the grape variety. Noir Blanc Champagne is made from 100% black grapes, usually 100% Pinot Noir or Pinot Meunier, of course, the two can also be blended. Some people may wonder why black grapes can produce such "white" champagne. In fact, most Champagne is a blend of dark-skinned and light-skinned grapes. The juice is kept clear by gently pressing the grapes, being careful not to squeeze the pigment out of the skins. Compared with Blanc de Blancs, Blanc de Noirs has a fuller body, full of rich dark berry aromas on the palate, and a long aftertaste.

Paul Dangin & Fils is a family business with a tradition of excellence, based in Celles-sur-Ource, a village full of character in the heart of the Côte des Bar. In 1947, Paul Dangin decided to continue the fine work of his father Joseph in the 19th century. He founded the Paul Dangin & Fils brand and, above all, created a fine Champagne based on the search for a balance between intensity and finesse.
Since then, the love of vines has been passed down from generation to generation. Our vineyards are fully exposed on exceptional mineral soils and cover an area of more than 50 hectares. This vast terroir is home to our Champagne grape varieties, Chardonnay, Pinot Noir and Pinot Blanc, a rare Champagne grape variety. Exclusive hand harvesting allows us to select the best bunches of grapes to produce our champagnes.

We practice sustainable viticulture that respects the environment through our Terra Vitis certification, with great care for our territory listed as a UNESCO World Heritage Site. It is in that same spirit of perfection that we blend our wines by combining varietals, specialty or reserve wines to create and perpetuate the Paul Dangin & Fils style. 【Celles-sur-Ource】
Celles-sur-Ource is located along the river Ource, on its left bank, that is, to the south of the river. Ource empties into the Seine downstream of Cells-sur-Ource, on the border between neighboring Bar-sur-Seine and Merrey-sur-Arce. Also counted as part of the Côte des Bar, the southernmost tip of the Champagne wine region, in the Aube department.
The history of viticulture in the upper Seine Valley should be traced back to Roman times. The vineyards are located on both banks of the Ource River, the right bank (north) and the left bank (south). Pinot Noir dominates. The commune of Celles-sur-Ource currently has 307.8 hectares (760.6 acres) of vineyards. There are 251.8 hectares of Pinot Noir (81.8%), 32.5 hectares of Chardonnay (10.6%), 6.1 hectares of Pinot Meunier (2.0%) and 17.4 hectares of other (5.7%).
