[Senkin – A famous sake brewery in Tochigi Prefecture that continues to innovate while respecting the original terroir]
Senkin Sake Brewery was founded in 1806 in Sakura City, Tochigi Prefecture. The ancient sacred bird "crane" worshipped by immortals is inherited in the family. On the "Xianqin" wine label, you can see the two characters "Xianqin" (the crane) in seal script with its wings spread out and flying (on the right side of the character "Xian" and on the top of the character "Qian"). The brewery is currently run by the elder brother Usui Kazuki and the younger brother Usui Masamune. "The sound of the immortal bird" refers to the cry of a crane, which means that when there is a dispute, an important person can immediately resolve the dispute with one move.
Kazuki Usui worked as a wine sommelier in Tokyo, and his winemaking style is diverse. In addition to wines that faithfully restore the traditional Japanese flavor, there are also many wines that cater to the tastes of modern people. Together with Shinsei, Kaze no Mori, Jonin Kyuheiji, Sawaya and other breweries, he has become a new-style brewery that is widely loved by young people and Western countries.
Xianqin Brewing pursues three major concepts – Domaine, Organic, Nature
Domaine: The common word "Domaine" in French wine means using grapes from one's own production area, making wine and bottling it in one's own winery, and completing all the processes in one's own winery. Here, it means respecting nature and acting in accordance with the uniqueness of the land. In Sakura City, Tochigi Prefecture, the unique "terroir", "water", "rice" and "sake brewing" are unique here. When these four elements resonate, they can create an unparalleled and unique sake.
Organic: The ancient sake rice "Kamenobi" is the ancestor of sake rice that is still alive today. But as time went by, it has lost its ancient genetic characteristics, and since genetic change is the fate of agricultural products, the original "Kamenobi" has actually been eliminated. Senkin Sake Brewery places great emphasis on the "original" Kamenobi. Therefore, 11 years ago, we returned to the origin from the seeds and revived the "original species". The "Kamenoo" which is full of wild DNA has been passed down from ancient times to the present, and will continue to be passed down to change the future of sake brewing.
Nature: The Nature Series in Xianqin is a series that goes beyond the "natural school". It is a supernatural sake that has been successfully revived using ancient traditional brewing techniques. It is completely additive-free and only uses rice, koji and water to brew sake. Today's sake can be said to be a product of technological innovation. But the fairy birds also dare to stay away from it. Respecting and obeying the teachings and philosophy of their ancestors is "Nature". This idea can break down the invisible walls in the world and connect all perspectives. For example, Nature Wine, craft beer, etc. can all be connected under the concept of "Nature".
