【Gongquan Ming Brew】
Miyaizumi Meijo is located in Aizu City, Fukushima, a tourist city famous for its Tsuruga Castle Tower (one of the top 100 castles in Japan). Founded in 1955, it has only been about 70 years since its establishment, but it is one of the top 50 sake breweries in Japan and has extraordinary strength. After separating from the long-established Haruka Sake Brewery in 1955, the company's main production brand is "Aizunomiyaizumi". The water used by Gongquan Mingniang for brewing wine is well water, which is hard water with very little iron content. Iron will destroy the color, aroma and taste of the wine. Using well water can effectively bring out the flavor of the wine rice. The geographical location of Gongquan Mingniang is also a unique basin location, and the large temperature difference makes the mature wine have a richer flavor. Because of its good natural conditions, "Aizunomiya Izumi" has been a best-selling sake in the brewery since its launch.
In 2007, Miyaizumi Meijo bought the bankrupt Higashiyama Sake Brewery's flagship store "Sharaku" and continued production. The current president, the 4th generation Kuramiyamori Yoshihiro, is a professional who inherited the family business. After studying at the Fukushima Prefecture Sake College for three years, he started brewing the "Sharaku" series independently in 2007, and took over all brewing work at the sake brewery in 2012. After inheriting the family business, Yoshihiro Miyamori established a completely new management system, and all aspects, including hardware, decoration, and brewing data management, underwent a major transformation. After the transformation, great progress has been made in brewing technology and quality control, and the already good "Sharaku" and "Aizunomiya Izumi" have been further improved. Sharaku won the gold medal at the National New Sake Evaluation Conference and won first place in both the Junmai Sake and Junmai Ginjo categories at the 2014 Sake Competition in just two years. name. Now, "Sharaku" and "Aizu Miyaizumi" have repeatedly achieved great success in national new sake evaluations and SAKETIME, which shows the strong brewing capabilities of Miyaizumi Meijo and the amazing perseverance of President Miyamori who never gives up easily.
