Only one barrel a year is produced for this limited autumn vintage. After half a year of low-temperature maturation, the wine develops a soft, smooth aroma and a gorgeous, thick flavour, which is not only suitable for chilling, but is also good at room temperature or warming up, and even better when paired with dishes with excellent flavours!
【Sake rice born in Nagano Prefecture】
In 1994, at the Nagano Prefectural Agricultural Experiment Station, a cross development of Hakumyo Nishiki (Shinko Sake No. 437) and Shinko Sake No. 444 was carried out to create a good suitable rice for sake. Shinkoji sake rice has a better rate of new white discovery and is easier to grow than Miyamonishiki.
【Yamanashi Brewing】

Yamanashi Brewery was founded in 1750 by Mr Ihei Kitahara, the first president of the company, who chose to brew sake in Shirakushu because of his love for the clear, sweet water there. The brewery has been owned by the Kitahara family, now in its 12th generation, with the belief that Japanese culture and brewing techniques should be passed on from generation to generation, and in 1835, the nobles of Shinshu (Nagano Prefecture) celebrated the completion of the brewery's new factory by presenting it with an antique screen engraved with the Seven Sages of the Chinese Bamboo Grove, thus giving it the name of the Seven Sages' handle.

The current president, Mr Kitahara Tsushima, is the 13th president. In general, Sake Brewery uses the Dushi system to manage its internal staff. However, in 2014, Shichijin abolished the Dushi system and replaced it with a membership system, with Mr Kitahara Tsushima as president and his brother, Mr Kitahara Ryouko, as the brewery's manager for the period 2014-2024. Yamanashi Mingyo's revolutionary innovation is none other than air bubbling sake. Since 2015, we have been producing a wide range of premium sparkling sakes, especially the AWA Association's bottle-fermented sparkling sakes, and have become more and more proficient in brewing sparkling sakes.
