In addition to being certified by the Japan AWA Sake Association, Nansage Sora no Aya is specially brewed using your brewing method (with the addition of Nansage Fu Rinmiyama Junmai sake). The taste is mellow. Fine bubbles, with a mature ripe apple fruity taste, fresh and refreshing pear aroma, fine bubbles, balanced acidity, mellow taste, and refreshing and pleasant acidity.



【Guizhou wine making method】

When making general sake, it is generally brewed using Sandan Shigo (three-stage brewing method). In the process, the raw materials rice, rice koji and water are added. However, for sake brewing, sake is used instead of water. Therefore, the sake produced will be thicker and sweeter.





[Japan AWA Wine Association Certification]



The Japan AWA Wine Association was established in 2106 with the purpose of gathering some outstanding winemakers to produce high-quality in-bottle secondary fermentation sparkling sake, achieving a quality similar to French champagne, and becoming a representative of high-quality sparkling wine. To obtain AWA Wine Association certification, a product must meet the following conditions.



1. The use of rice, rice koji, and water is the standard for Japanese sake.

2. Use 100% domestically produced rice and pass the agricultural product inspection level to level 3 or above.

3. The bubbles come from the natural fermentation process (it can be the large tank method or the champagne method).

4. The appearance should be transparent enough so that it will create a visual bubble feeling when poured into the container.

5. The alcohol content must be above 10%.

6. The gas pressure is at least 3.5 Bar at 20 degrees Celsius.




【Yamanashi famous brew】



Yamanashi Meishu was founded in 1750. The first president was Mr. Kitahara Ihei. He had a special liking for the clear and sweet water of Hakushu, so he chose to brew wine there. Now in its 12th generation, the company upholds the belief of passing on Japanese culture and brewing techniques from generation to generation. In 1835, in order to celebrate the completion of a new sake brewery, the nobles of Shinshu (Nagano Prefecture) specially presented an ancient screen engraved with the Seven Sages of the Chinese Bamboo Forest, hence the name "Seven Sages".
