"シン・タカチヨ" is the lightest and low-alcohol series in Takachiyo's lineup. The moment you open the bottle, you can feel the gentle fruity aroma. In addition to the soft fruity aroma, it also has a refreshing and light taste. The refreshing citrus sourness and soft sweetness linger in the mouth, leaving a gentle and long aftertaste. In addition, the alcohol content of this sake is only 12%, which is relatively low, making it easier to drink!
This sake is made using Ippon Jime sake rice from Niigata Prefecture that is finely ground using the "flat rice polishing" technique. The sake rice is cultivated from "Gohyakumangoku" and "Fengbei", and is an extremely difficult to grow sake rice. The sake produced here has the characteristics of "a refreshing finish without being greasy" and "a light taste". Sake rice was developed by the Niigata Prefectural Government in 1981 and officially adopted in 1993. In 2005, the original seed of "Ippon〆" was transferred to Takachiyo Sake Brewery for management and cultivated by the Tibetans and contract farmers.

Founded in 1871, Takachiyo Sake Brewery is located in Uonuma City, Niigata Prefecture, at the foot of Mt. Makiki, one of the 100 most beautiful mountains in Japan. The snow that falls on Mt. Makiki gushes out of the well after a hundred years of lurking, creating the extremely soft water of Takachiyo. The soft flavor and smooth taste produced by long-term low-temperature fermentation are the characteristics of Takachiyo.
