Taste: Matured in first-fill and refill Oloroso sherry casks, it is full of mellow and rich sherry cask aroma, pleasant cinnamon rolls and stewed citrus jam aroma, refreshing mint leaves with the sweetness of raisins, and a silky and soft taste. After entering the mouth, it feels like the sweet taste of banana pastries covered with cranberry jam, followed by multi-layered fragrances such as blackberry jam and malt biscuits. The aftertaste slowly releases the scent of spices, dried fruit candied fruits and a hint of traditional Scottish snacks (Scottish Tablet). This is a wonderful and worth-trying rich sherry cask wine.
In 1897, William Grant of Highland Distillers joined several like-minded entrepreneurs to create Tamdhu with the dream of brewing the best whiskey in the world. The founders of Tamdhu had the same philosophy and were committed to doing everything to the best extent. Therefore, after the distillery was established, they invited Mr. Charles C Doig ESQ, the best distillery construction engineer at the time, to join. In addition, several entrepreneurs carefully selected the distillery site on the banks of the River Spey, adopted the most advanced technology at the time, and imported top-quality sherry barrels from Spain. Unfortunately, two years after its establishment, Tamdhu encountered financial difficulties and was sold to the Highland Distilling Company.
In 1949, Tamdhu modernized the traditional floor malting process with the introduction of the Saladin Box, a French invention that mechanized the process of turning the barley. This change greatly reduced the burden on the distillery workers and also increased Tamdhu's production. Over the next 15 years, Tamdhu's production continued to grow, and demand for malt increased further, so the distillery once again introduced an upgraded version of the IO Saladin Box.
In the 1970s, the whisky boom led to a surge in demand for whisky, and Tamdhu expanded, adding four more stills. In 1999, Edrington Group took over Highland Distilling Company and its Tamdhu. In 2010, due to external pressure, Tamdhu was forced to close. In 2011, Edrington Group sold Tamdhu to Ian Macleod Distillers (hereinafter referred to as IMD). After IMD took over, it restarted the distillery in 2012, revitalized the Tamdhu brand, and decided to abandon traditional indoor malting and instead purchase malt from external suppliers.
In terms of brewing equipment, Tamdhu has 9 Douglas fir fermentation tanks and 3 pairs of distillers. In addition, Tamdhu pays great attention to the selection of oak barrels. In Tamdhu's view, sherry barrels play a vital role in the flavor and color of its whiskey, so Tamdhu uses top-quality sherry barrels from Spain. After the whiskey is barreled, it will be transported to the warehouse for aging. Tamdhu has multiple warehouses, including 4 wooden pad warehouses, 1 shelf warehouse and 5 pallet warehouses.
