Tomatin is located in a small village of the same name in the Highlands region of Scotland, UK, about 25 kilometers away from Inverness. It is known as the representative of high-quality Highland single malt whisky. Tomatin means "juniper hill" in Scottish Gaelic. Juniper is a type of wood that does not produce smoke when burned, so it was favored by early distilleries, which also explains the history of Tomatine whisky production. Tomatin Distillery has excellent conditions for brewing single malt whisky. The cold climate at high altitude makes the whisky aging process slow and delicate. The Alt Na Frith spring water from the mountains is clear and sweet. It flows through granite, peat and heather, providing the Tomatin distillery with excellent, slightly mineralized soft water. , and high-quality barley with full grains, shape the delicate yet rich and mellow characteristics of Highland single malt whisky.

Tomatin initially had two stills with an annual production capacity of 450,000 litres. In 1956, two new stills were added to the distillery, and in 1958 a further set of stills was added. In order to increase production, by 1961, the number of Tomatin's distillers had increased to 10, and another one was purchased in 1964. By 1974, Tomatin had a total of 23 stills, 12 of which were wash stills and 11 were spirit stills. The distillery also had 7 distillery tanks with an annual production of 12 million liters, making it the largest distillery in Scotland at the time. At the time, Tomatin was one of the most important producers on the whisky market and one of the few distilleries offering single malt whisky. Most of the whisky produced by Tomatin is sold in bulk to third parties such as J&B, Chivas Regal and Johnnie Walker for use in blended whiskies. However, in the 1980s, as sales of blended whiskies declined, demand for Tomatin whiskey also continued to decline, and Tomatin was forced to go into liquidation. In the 20 years before liquidation, Tomatin whisky exports continued to rise, with its largest customer being Japanese beverage maker Takara Shuzo Ltd. In 1985, Takara Shuzo partnered with trading company Okura to acquire Tomatin, which was in the process of liquidation, and established Tomatin Distillery Company Ltd. in 1986, making Tomatin the first company wholly owned by Japan. A majority-owned Scottish whisky company. Since then, Thomasin has started to focus on building its own brand, and its development has been booming. Since 2000, Tomatin has focused on the production of single malt whisky. Tomatin has 10 malt boxes, each with a load capacity of 50 tons, in which the malt is stored before being crushed and saccharified. Tomatin's saccharification tank is made of stainless steel and has a capacity of 8 tons. The water used in the mashing process comes from the mouth of the Ortena River, where the water is softer and can give Tomatin whiskey its unique flavor. After mashing, the wort is transferred to fermentation barrels for fermentation. The distillery has a total of 12 stainless steel fermentation vats, each with a capacity of 42,600 liters. The liquid after fermentation will be pumped into the still for distillation. There are a total of 6 sets of distillers in Tomatin, but only 4 of them are in use. The distillery's stills have a capacity of 5 million litres, far higher than the distillery's current output, even though the distillery's output is rising year by year. After distillation is complete, the wine enters the aging stage. Tomatin has 14 warehouses with the capacity to age 170,000 barrels of whiskey. The barrels used for aging Tomatin include sherry barrels, port barrels, new American oak barrels and bourbon barrels. Before being filled with whiskey for aging, the barrels undergo rigorous inspection and repair by Tomatin.
