Shintani Shuzo







Shintani Shuzo was founded in 1949. After the second generation, Shintani Suehiko, took over, the brewery, known as "Wakamusu," long earned local affection. With the advent of the Heisei era, lacking a successor, his grandson, Shintani Yoshinao, took over as the third-generation brewer. However, due to the advanced age of the brewer, the brewery faced retirement, and the brewery was on the verge of closure. In 1949, he decided to continue brewing on his own, transforming the brewery into a Shikijozoku brewery capable of brewing year-round. However, as a complete novice in brewing, he faced a difficult start. Through continuous experience in brewing, he gradually established his own style.

In 1949, the new brewery was completed, marking a new beginning. Upon the relocation of the brewery, the husband, who had long served as both president and brewer, handed the baton to his wife, becoming the only female brewer in Yamaguchi Prefecture. Since marrying into the brewery, she has been juggling a dual life between nursing and sake brewing for approximately eight years. While this requires considerable effort, her brewing style is dedicated to pursuing the clear, beautiful flavor inherent in Japanese sake, striving to produce sake with minimal off-flavors. She meticulously cares for each batch of sake, treating it like her own child, and meticulously brewing small quantities of high-quality sake.



【Yamaguchi Original Sake Rice "Saito no Shizuku"】

"Saito no Shizuku" is a sake rice cultivated at the Yamaguchi Prefecture Agricultural Experimental Field since 1997. It was bred from the legendary rice "Yarayoto" and "Saikai 222" (a descendant of Yamada Nishiki). In 2002, it was given the systematic name "Yamaguchi Sake No. 1," and brewing trials began in 2003. In 2004, it was officially named "Saito no Shizuku," making it a relatively young sake rice.

Saito no Shizuku is resistant to lodging, easy to grow, and high-yielding. Its large grains make it suitable for highly polished rice, making it suitable for brewing Junmai sake and Ginjo sake. It possesses the light, pure quality of Shizuku sake.
