A book called "Spanish Wine" is written by Lin Yusen, a master's degree in wine economics and management from the University of Paris 10, a professional sommelier at the French University of Wine, and a freelance writer specializing in wine and food. Every production region in Spain will be mentioned in the book, including some wineries recommended by the author.
One of them is called Chivte, which has the famous coleccion 125 white wine, 100% Chardonny, which is fermented in oak barrels and aged in a more international style.
The author mentioned in the book that he went to Meursault Village in Bourgogne 15 years ago to attend a cocktail party. Meursault is a very famous white wine village in Burgundy, France. The main grape variety is Chardonnay. Each major winery will bring its most precious white wine. The author brought two Chivte Coleccion 125 Blanco white wines, but they were all sold out in the end.


【Chivte 】
The winery has a long history, dating back to 1672. The number 125 on the wine label commemorates the 125th anniversary of the winery’s first export of wine in 1860. The output of this series of wines is not large, with a limit of 2,234 bottles per year. It is very famous in the Navarra region of Spain, and almost every year its wines have a score of over 90. Guide Penin’s highest-scoring Chivite White Collection 2017 scored 96 points.
J. Chivite Family Estates produces wines rated the best by the prestigious Guide Penin's tasting team. The highest recorded score was the 2005 Chivite Coleccion 125 Blanco which received an outstanding score of 99/100 points. Only two other white wines have achieved this score in the history of Guide Penin.

Chivite was established as a member of the Wine Foundation in 1998 and is the oldest and most prestigious winery in Spain.

Denis Dubourdieu has been working at Chivite as a consultant since 1993. Denis is Professor and Director of the Institute of Wine in Bordeaux. In addition to his numerous scientific honors, he was awarded the Order of Merit in Agriculture from the French government. He managed five families and served as winemaker for some of the most prestigious wineries, including Chateau d'Yquem and Cheval Blanc.。

Julián Chivite says: “At Chivite we remember Denis Dubourdieu and we want to pay tribute to him every time we open a bottle of Colección wine”.
He feels that in Legardeta, the climate and soil allow it to develop typical characteristics, complexity and excellent aging potential. The orientation of the land protects the vines from excessive sunlight and prevents dehydration of the grape berries. Chardonnay is grown in a warm climate. The influence of the Atlantic and continental climate allows Chardonnay to ripen slowly at its own pace. Maintains good acidity, producing fresh, expressive wines. Since 2011, César Muñoz has been Chivite’s winemaking director. He started making wine tastings with Denis Dubourdieu.

Chivte coleccion 125 series uses Single Vineyard, the soil is rich in clay and chalk sediments,
Chalk soil is formed when an organism dies and sinks to the bottom of the sea. It takes millions of years to accumulate into a thick layer of shells. This layer of stuff is compressed into a soft limestone, and generally the basic properties of soil for grapes to grow in are pH and good water-holding and drainage. The pH of the best soil for different grape varieties varies, but not by much. (Generally speaking, the ideal pH value of the soil where grapes are grown is 5.0 to 6.5). Chalk soil is alkaline, so the acidity of the grapes grown will be relatively high, which can make the wine more refreshing.
The grapes come from vines located on the slopes of Granja Legardeta (Municipality of Navarro de Villaturta). After harvesting by hand, the grapes are screened before destemming in the winery and cold soaked for 6-8 hours, then pressed, resting before starting the fermentation process and left for 3 weeks in stainless steel vessels at a controlled temperature of no less than 27ºC. The wine is then placed in French oak barrels for 11 months and then left on its lees with battonages daily. After the aging process is complete, it is filtered before being released to the market.
