【Spanish fortified alcohol-Fondillon】
Fondillon is a unique local wine of Alicante. It is the only local wine in the world that has been recognized by the European Union in the E-Bacchus database of the European Union, and is specially protected by the Alicante origin mark.
Its main advantage is that the winemaking material is obtained from the over-ripened Monastrell grapes on the vine (this is how it is classified). Due to the long summer and due to the low humidity in October and November, this can extend the life cycle of Monastrell grapes (the time they have been ripe).
Another unique feature of this wine is that the alcohol only comes from grapes, so the fermentation is biological, without any additives. This distinguishes it from other protected wines. Although it does have sensory properties similar to Port and some sherry with additives, its strong color and aroma make the wine have a longer life. It is the basic feature of the product.
Fondillon is usually semi-sweet, and is usually bottled and sold after a long period of aging (at least 10 years) in barrels. The barrels used in the aging process are all old Alicante barrels, each can hold 1,200 liters of water, which is the Solera method.

Selected Monastrell wine made with traditional Solera system, the base wine of this wine is from 1972.
The Solera system is like a "trapezoidal" sequence composed of multiple oak barrels. The aged wine is extracted from Solera's barrels and cannot exceed one-third of the amount. Then take a third from the previous row and add it to Solera's oak barrels, and so on, until new wine is added to the top barrel.
The Solera aging method is to mix wines of different aging years into wines with consistent taste and alcohol content. In theory, every bottle of wine bottled in this way will contain molecules of the original wine. In addition, the aged wine will also obtain the nutrients of the new wine, so that the wine can continue to be fermented and matured.
The Solera system is the core of the "Sherry Ageing" process. It is a method of continuously fusing new and old sherry wines. Spain uses the same method to produce the unique Fondillón.
