Tasting note: The aroma is subtle and elegant, smooth on the palate, medium-bodied, initially revealing a natural sweetness and mellow umami, followed by a gentle white peach aroma and a hint of refreshing citrus. A crisp acidity and slightly spicy finish tighten the finish, a typical refreshing and understated shochu-style Junmai Daiginjo sake. Born for cooking, enhancing dishes, especially suitable for shellfish and white fish sashimi, citrus or salt-seasoned dishes. The sake's presence won't overpower the ingredients, but rather subtly elevates their umami.

This sake is a collaboration between Yamawa Brewery, one of Miyagi Prefecture's most promising new-generation breweries, and Niizawa Jozo, considered the "ultimate shochu sake" in the Japanese sake world. First brewed in 2019, it was initially a commemorative sake for the 200th anniversary of the department store "Fujisaki," and due to its immense popularity, it has become a limited-edition New Year's sake sold annually in Japan.

The 2026 vintage was brewed under the leadership of Yamawa Sake Brewery, using rice from Miyagi Prefecture. It is made into Junmai Daiginjo with 40% polished rice and Miyagi yeast. It continues the local sake's consistent refreshing and high-quality characteristics. It is not a single brewery product, but a glass of sake where Yamawa's crispness and Hokusei's balance meet.



【About Yamawa Sake Brewery】

Founded in 1896 (Meiji 29), Yamawa Sake Brewery is located in Kami-cho, Miyagi Prefecture, bordering Yamagata Prefecture. It was founded by Heiwa Itō and is currently run by the seventh generation, Daisuke Kuraki Itō. Adhering to the philosophy of "Simple is Best," the brewery does not pursue avant-garde or exaggerated aromas, but focuses on brewing pure sake that blends seamlessly into everyday meals. Its perfectly balanced taste and silky texture complement the original flavors of ingredients, making it a favorite among professional chefs in Miyagi Prefecture. The "Yamawa" series, launched in 2004, has received widespread acclaim for its unique flavors every year. Its Junmai Daiginjo sake won first place in the Junmai Daiginjo category at the SAKE COMPETITION 2014 and 2024 respectively.



About "Niizawa Brewing"

When Iwao Niizawa, the fifth-generation successor of Niizawa Brewing, took over as president, he was the youngest toji master in Miyagi Prefecture. He boldly reformed the company, converting nearly 90% of the products to junmai sake (pure rice wine). Although initially met with skepticism, he launched the new brand name "Hakuro-sei" in 2002, marketed as the "ultimate sake for meals," sparking a trend of pairing sake with food. The brand subsequently became the official sake for Japan Airlines' business and first-class cabins, was selected as the state banquet sake for the G7 summit, and became the official sake of the 2010 FIFA World Cup, also appearing at the Grammy Awards. In 2008, he founded "Rice Corporation" to refine rice milling technology, and the following year released "Hakuro-sei Resonance," with a rice milling ratio of 9%, which led the industry for a time. In 2018, at the young age of 22, Nanami Watanabe took over as toji master, becoming Japan's youngest female toji master; her brewed "Atago no Matsu Fresh & Dry" immediately won first place in the honjozo sake competition at the Brussels International Brewing Competition. In 2024, Shinze Brewing Group was ranked number one in the world's wine cellars.
