Purchased in 1937 by the Moet Chandon Group, which for a time labelled its flagship wine DomPerignon, DomPerignon became independent of Moet Chandon in 1947, and in 1983 was reorganised as a member of the MoëtHennessy Louis Vuitton (LVMH) Group. Dom Perignon's three main lines are Vintage Champagne, Pink Champagne and Plenitude, and the grapes used in Dom Perignon are sourced from Grand Cru vineyards, except for Hautvillers. Vintage Champagnes are only produced in excellent years, and are abandoned when the weather is unstable in the Champagne region. The top range Plenitude has an even longer ageing period, with the ‘P2’ aged for about 15 years, of which at least 12 years are for the ‘P3’, which is the top of the range. P3" is the top of the range, aged for 30-40 years, with at least 20 years on the lees.

Zesty yet integrated chewy acidity and a medium body with a toasted finish. Drink of hold.

The 2015 Dom Pérignon shows a singular, ethereal profile with aromas of white pepper, iodine, ripe orchard fruits, toast, smoke, herbs and spices. Medium to full-bodied, layered, and structured, it’s enveloping and round with a delicate phenolic mid-palate that underlines chalky dry extracts, concluding with a sapid, penetrating finish with gastronomic bitterness. This iteration of Dom Pérignon, though replete with the customary charm and vinous generosity that typify the label, distinguishes itself by its structural delicate austerity and a notably phenolic profile, giving rise to a remarkably linear and well-defined style that diverges markedly from the more familiar expressions of Dom Pérignon. This is a blend of 51% Pinot Noir and 49% Chardonnay with a dosage of 4.5 grams per liter; it will age wonderfully and can be enjoyed now or over the next 20 years.
