One of only six red and white wines in Bordeaux to be included in the Cru Classe de Graves, Château de la Cavalier is one of them, and has won wide acclaim for its outstanding quality, with frequent high ratings from celebrities.

Vinification: The genuine wines are aged for 14-24 months in 40-60% new oak barrels. For the white wines, the fruit is harvested and transferred to airbag presses, where it is gently pressed in separate parcels. Once fermentation is complete, the wine is aged on the lees in order to give it fullness, richness, smoothness and complexity.

In the Knights' winemaking philosophy, the mission of the winemaking process is to faithfully reflect the characteristics of the terroir. The winery respects the differences between vintages and adapts its vineyard and cellar management accordingly. The winery is equipped with small fermentation tanks, where the fruit from the different plots is vinified separately. For the red wines, the fermentation is generally preceded by a cold maceration of 4-6 days in order to obtain a fuller bouquet of fruit. Manual pressing of the capsules is used during fermentation to soften the extraction process.
