葡萄來自lieu-dit « Les Cassanets »，主要以鵝卵石土壤為主，種植於1956-1958年的Grenache，釀酒葡萄已經達到50年老藤，以85%比例為主調，混釀約15%Syrah，而Syrah則來自 lieu-dit « Les Bédines »，種植於1979年。Grenache & Syrah 分別橡木桶熟成12個月和18個月之後再混釀。

The brilliant 2000 Chateauneuf du Pape Les Quartz is more evolved as well as spicier than the floral, mineral, and black fruit-dominated 2001. Full-bodied, with high glycerin, and a heady concoction of minerals, black raspberries, cherries, blackberries, and licorice, this layered, fruity, pure, well-balanced 2000 has a huge finish of nearly 50 seconds. It is a tour de force in winemaking.

The 2000 Chateauneuf du Pape Les Quartz is beautiful as well, with complex garrigue, spiced meats, bouquet garni and pepper emerging from the glass. It has a full-bodied, open, sexy and yet concentrated feel on the palate, and I love its overall purity of fruit. While it’s more evolved than the 2001, it should cruise for another couple of years, although certainly, there is no reason to hold off.

【Vinous 93+】

Good full ruby-red. Fruit-drivenaromas of black raspberry, cassis and bitter chocolate, with a hint of exotic fruits. Like a berry cocktail in themouth, with penetrating, dense, sharply focused flavors of red berries, licorice and dark chocolate. A wonderfullylush and sweet wine with a compelling sappy quality and lovely aromatic character. But still a bit tight in themiddle; the substantial, firm tannins call for four or five years of additional bottle aging.

這些年來，Claude努力經營，除了在這片園地開墾出45公頃的葡萄園外，還在教皇新堡買了9公頃的園子。到了他要退休的時候，就把擔子交給了小女兒Sylvie一家。Sylvie的先生Jean來頭不小，他是Sancerre名家Vacheron的少東家。在接手莊園之前，這對小夫妻一直Vacheron參加釀酒的工作。可惜的是，Jean在千禧年初期猝逝。Sylvie聘請了Bruno Gaspard出任釀酒師。也是在Bruno的手裏，Le Clos du Caillou的酒款獲得了更多酒迷和酒評家的認可，連連獲得高分評價。

從爸爸手上接手Le Clos du Caillou以後，Sylvie也秉承了父親的理念，敬畏大自然和環境的給予。為了更好地管理葡萄園。莊園從2000年開始全面實施有機種植，2007年更是開始使用生物動力法管理，而酒莊最終也於2010年獲得了有機種植的官方認證。
