Domaine de Chevalier is located in Pessac-Leognan. Pessac-Leognan is located in the north of the Graves district. It became its own AOC in 1987. Domaine de Chevalier was rated as a Grand Cru Classé de Graves in 1953 when the Graves were classified (Classification of the Graves). The Graves regional classification system is different from other Bordeaux classifications. Graves separates red wine and white wine classification Domaine de Chevalier's red wine and white wine are also included in the Grands Crus Classés, one of the 14 wineries.
The winery has a long history and has been documented in the 17th century. Jean Ricard began to plant grapes. He is regarded as the founder of the estate, and his son-in-law Gabriel Beaumartin managed the estate for 40 years. Until 1983, the Bernard Family acquired the estate, and the current owner is Olivier Bernard.
Domaine de Chevalier is located in Pessac Leognan, the center of the Graves production area. The gravel terroir makes the owner choose to plant two of the best grape varieties in Bordeaux, Cabernet Sauvignon and Sauvignon Blanc. In addition, Merlot, Cabernet Franc, Petit Verdot and Semillon are also planted in the vineyard. The vineyard area is about 51 hectares, of which only 6 hectares are planted with white grapes.
Taking good care of each vine
“In fact, each vine is unique and therefore treated differently and there are no hard and fast rules...First of all, we closely observe what is happening in the vineyard on a daily basis. Each plot is selected according to its specific needs and character pruning and pruning... ” (Oliver Bernard, owner)
The winery uses smaller barrels (100-50 hl). Let the wine fully contact with the wooden barrel to develop a richer wood flavor. In addition, the width of the stainless steel barrel is greater than its height, which is beneficial to the extraction of color and tannin, and increases the contact area between the juice and the cap. "Fermentation is preceded by a maceration lasting 4-6 days, which accentuates the fruitiness of the wine and helps soften the tannins.
The winery is faithful to reflect the terroir, emphasizing not only concentration and depth, but also complexity, refinement and elegance. Depending on the vintage, between 40% and 60% of red wine production goes into the grand vin. The grand wine is aged for 14-24 months in new oak barrels, while the second wine, Esprit de Chevalier, is aged for 12 months in two-year-old oak barrels
