David Fagot now owns 4 hectares of vines in the village of Solutré-Pouilly, while Prisséand produces Pouilly Fuissé, Saint and Mâcon Prisséblanc appellation. Since its establishment in November 2000, David has sought to emphasize in its wines the rich and complex nature of the terroir of Chardonnay and Mâconnais. By using environmentally friendly practices, only treatments that are critical to the health of the vines are used. Covering plantings that cannot be mechanized, stem plots such as mechanical and chemical weeding, and the most appropriate methods of pruning and selective suppression of secondary shoots, all aimed at limiting yields. Temperature control and slow fermentation, the final stage that determines the quality expression of each plot, have been developed through work carried out on the vines.

Macon is located on the banks of the Saone River, extending 50 kilometers from Sennecey le Grand in the north to the south and 15 kilometers wide. The end is connected to the Beaujolais production area, and is actually at the foot of a central plateau. The hills of Mâconnais stretch for about 40 kilometers from the Côte Chalonnaise to the Solutré Rock, bordering on one side the Saône and Grosne rivers. The vines were first planted during the Gallo-Roman period and were cultivated in the Middle Ages by the powerful monasteries of Turnus and Cluny. The history of AOC Mâcon dates back to 1937.
The terrain is a hilly terrain with a wavy monoclinic layer. The vineyards are distributed on the foothills that are continuously separated by parallel faults. This is the part where the hillside connects with the surrounding flat land, about 400 meters above sea level. There are Bajorian limestone and Jurassic marl at the upper end, and the marine sedimentary rocks at the foot of the mountain alternately form calcareous clay soil with good drainage properties.
The color of white wine is white gold or golden yellow or straw color with a soft silver or green sheen. It smells of white roses, acacia, honeysuckle, fern, verbena, lemongrass and citrus fruits (grapefruit, orange). In the mouth, the finish adds nuances of fir, papaya and fennel. The taste varies from village to village and place of origin. The wines are fresh and sweet, dry and fruity. They have enough acidity, with good concentration, to ensure that they retain their quality. The wine is full-bodied and round.
