David Fagot Winery currently owns 4 hectares of vineyards in the villages of Solutré-Pouilly and Prissé in Burgundy Macon, producing white wines from legal production areas such as Pouilly Fuissé, Saint.Verian and Mâcon-Prissé. Since the establishment of the winery in November 2000, wine owner David Fagot has strived to emphasize the rich and complex connection between Chardonnay and Maconnais "terroir" in his wines. He makes corresponding adjustments in both vineyard management and winemaking methods in order to obtain wines that best reflect the unique qualities of each plot.
David Fagot works by using environmentally friendly practices and only using treatments that are critical to the health of the vines.
Cover planting, mechanical and chemical weeding of plots that cannot be mechanized, as well as the most appropriate pruning methods and selective suppression of the number of buds, make the vines healthier, but this limits grape yields.

In this regard, the white wine of Maconnais is sweeter than the white wine of other regions in Burgundy, with a warm taste and unrestrained aroma. The district can be subdivided into Pouilly - Fuisse, Pouilly - Vinzelles, Pouilly - Loche, St. Veran, and Vire-Clesse. Each of the five major villages has its own characteristics.
