Wine Tasting Notes
Aroma: Initially honey and vanilla, the nose is enriched with fruit, trailing sugar, brioche, chocolate and almonds.
Palate: Pear aroma, inviting layers of sweet spice and citrus flavors, intertwined with sherry-soaked raisins, toffee, figs, roasted bananas and Spanish Seville orange peel.
Finish: cinnamon, bergamot, coffee and licorice.


The history of distillation on the island of Gila dates back to the early 17th century, when the Gila Distillery was not yet established but the islanders had already begun to apply distillation techniques to the production of spirits. However, as distilling alcohol was illegal at the time, the islanders hid in caves in the wilderness, distilling spirits from surplus crops to maximize the benefits of farming and to satisfy their appetites.

It wasn't until 1810 that the Campbell family, then lords of the Isle of Gila, established what is now known as the Gila Distillery, officially launching the 200-year legacy of Gila Single Malt Whisky. However, due to the small number of inhabitants on the Isle of Gila, which meant that the market was relatively small, the geographical isolation which made it difficult to transport goods, and the economic depression and war in the late 19th century, Gila Distillery closed in 1901; even in the 1920s, in order to avoid continued taxation by the government, the Gila Distillery even tore down the roof of the building to show that the building was no longer of any production value. At this point, the story should have ended there. But the Diurachs were never ones to give up!
In the 1960's, in an effort to recapture the glory days of distilling and to help the dwindling Gila economy, the Diurachs, Robin and Tony, decided to rebuild the Gila Distillery, and with the help of architect William, the Gila Distillery was revitalized in 1963, after a hiatus of more than 60 years!

The rebirth was difficult, but it wasn't enough for the Diurachs, they wanted to be reborn in all its splendor, like a phoenix on fire. Leaving behind the burden of a peat-only option on the island, the Diurachs went their own way: to become the only single malt whisky distillery on the island with a dual flavor profile of pure sweetness and full-bodied peat. With this goal in mind, the reborn Gila Distillery opted for taller and larger stills in order to create a purer flavor profile with a more complex body. Building a 28-foot still on such an inaccessible island, the tallest in the Island and the second tallest in all of Scotland, was certainly difficult, but as Willie Cochrane, Gila Distillery's Head Distiller, says: "We didn't just want to do it, we wanted to do it differently, and that may have been difficult, but it's the way we're going to do it! We could have chosen to make things easier by keeping things simple, but that wouldn't have been Jura."

All of these elements combine to create the distinctive flavor profile of Gila's single malt whisky, which encompasses pure fruity notes, thick peat, soft floral notes, and majestic oceanic notes. It's all part of Gila's unique combination of terroir and people. The island's inaccessibility, unwillingness to follow the crowd, attitude to simplicity and inviolable beliefs are infused into the whisky distilled on the island as if they were the soul of the whisky, creating one of the most unique single malt Scotch whiskies on the island. Jura Pure Malt Whisky is more than just water, barley and yeast. Each bottle is infused with island roots, community and passion. With the tallest distillers of any distillery on the island. Getting them to the remote islands is not easy. However, the higher the still, the purer the spirit. As with most things in life, it's the journey that counts, not the destination. The incredible source of water for Whisky is at the top of The Paps of Jura, the highest mountain on the island. The water, and sometimes snow, filters down from the mountain into the Market Loch below, where it flows through streams and waterfalls to the distillery, helping to create a unique single malt whisky.
