Characteristics: Destemming followed by cold maceration to extract colour and tannins. Alcoholic fermentation. Punching down. Chaptalisation, racking, and pressing. Maturation in oak barrels. Malolactic fermentation. Light filtration before bottling, followed by further ageing in oak barrels (20% new oak).
Palate: On the nose, it offers aromas of red fruits, cherries, raspberries, violets, and a hint of floral notes. On the palate, it is refined with smooth tannins, a full-bodied structure, a lingering finish, and rich fruit flavours.
【The Volnay appellation in Burgundy】
Volnay is often contrasted with the robust Pinot Noir of neighbouring Pommard, yet its wines exhibit a silky, refined structure, elegant aromatics and surprising ageing potential – truly embodying the concept of “an iron fist in a velvet glove”. Volnay's reputation reached its zenith particularly during the 17th and 18th centuries, when more silky and refined styles were favoured. Even today, Volnay remains regarded as representing the softer side of Burgundy reds, often displaying greater refinement and elegance compared to neighbouring Pommard. The Pinot Noir wines produced in Volnay are elegant in style, typically displaying aromas of violets, gooseberries, and cherries. They possess excellent concentration and ageing potential, developing notes of spices and stewed plums over time. They are particularly suited to Burgundy red wine enthusiasts who favour a refined, elegant style!
【Domaine Poulleau】
At the heart of Burgundy's vineyards, the Poulleau & Fils family estate thrives through time-honoured winemaking traditions. Nestled between the hills and fertile soils of this iconic appellation, the estate was founded in 1960 by Michel Poulleau and his wife. Today, it is managed by their son Thierry and daughter-in-law Florence. The 8.3-hectare vineyard employs eco-friendly cultivation practices.
