The fresh, layered and densely fruited nose!

Domaine Geantet-Pansiot is located in the Cote de Nuits region of Burgundy, France. It is a boutique winery in the region and is known for its perfect balance between traditional craftsmanship and terroir expression.
The history of Château Passillon can be traced back to the 1950s. In 1954, Edmond Geantet and Bernadette Pansiot founded Château Pansiot in Gevrey-Chambertin. The couple planted grapes and made wine on a vineyard of only 3 hectares at the time. After several expansions, the winery's vineyards extended to other regions of Burgundy.
In 1977, Vincent, the son of the Passillons, joined the family business and officially took over the winery in 1989. He rationally combined modern winemaking concepts with the traditional winemaking philosophy adhered to by his father, creating high-quality Pinot Noir that is widely praised by Burgundy wine lovers all over the world. Vincent’s son Fabien has been working with his father since he was 12 years old and officially joined the winery in 2006. The father and son inherited the Passion family's passion for wine, carefully cultivated grapes, and laid a solid foundation for brewing high-quality wine.

In 1991, Château Passillon opened up 4 hectares of new vineyards in Gevrey-Chambertin. Since then, the estate has acquired several more plots of land in Chambolle-Musigny, including some classified as Premier Cru. From generation to generation, the winery has continuously updated its winemaking facilities, renovated its buildings and improved the quality of its winemaking. The vineyard has grown from the original 3 hectares to 22 hectares today, of which 2 hectares are used to produce white wine. The soil in the vineyard is limestone and clay-limestone soil. The vineyards are farmed sustainably without the use of herbicides or chemical fertilizers. Green harvesting is also one of the ways wineries limit production. Vincent and Fabian enjoy communication and cooperation. Vincent was one of the first members to join the local Agricultural Technology Research Center. They advocate learning from each other and sharing resources with peers or upstream and downstream industries to seek better development for the winery.
In terms of winemaking, the winery combines both modern and traditional winemaking concepts. In the wine cellar, the sorting standards are very strict. The winery implements cold soaking before fermentation to add fruitiness to the finished wine. Only local yeast is used for fermentation, and oak barrels with a new barrel ratio of 30% are used for aging for 14 months. The finished wine is directly bottled without filtration. The estate has a vaulted cellar dating back to 1840, used for aging wine.
