The winery works in the vineyard manually, planting grape varieties according to local conditions, improving vineyard management with the times, adding modern winemaking equipment, and constantly researching new winemaking techniques, so as to brew a wine that fully conveys the terroir of Saint-Estèphe and Wines based on the winemaking concept of Estour Estate.
In 2008, the new brewing workshop of Chateau d'Estourt was completed and put into use. This is also the first brewing workshop in Bordeaux that relies entirely on the gravity gravity method for the transportation of grape fruit and wine. The winery is currently equipped with a total of 84 temperature-controlled stainless steel fermentation tanks of different sizes, and the grapes of different plots and batches are brewed separately.
Château d'Estoure produces wines with a typical Saint-Estèphe style, with concentrated and elegant flavors, rich layers, solid skeleton, and a combination of complexity and delicacy. Its official wine, Château Cos d'Estournel, Saint-Estournel, Saint-Estournel, France, is a high-scoring frequent visitor on the lists of major wine critics and wine review agencies. Cos d’Estournel is a well-known second-tier Bordeaux winery, and the first vintage of its authentic baijiu was in 2005. As soon as it was released, it entered the Sotheby’s auction market. Because it is very rare, it is difficult to find a bottle. In the first few years on the market, the output was less than 100 cases, and it was not until 2009 that there was enough volume to be sold as en primeur. At this time, the annual output also reached about 200 cases, but it was still very small. Since then, its production has gradually stabilized and its blend has been disciplined, at about 80% Sauvignon Blanc and 20% Semillon. Its grapes come from the north of St. Estephe, next to the village of Pauillac, and there is actually only a stream like a big ditch separating it from Château Lafite. The gravel hills where it is located have very good conditions for planting grapes. Cos d'Estournel has always been the wine with the highest price in St-Estephe Village, and it is listed as a "super second winery (super second)"
