Château Pichon Longueville Baron or Château Longueville au Baron de Pichon-Longueville (commonly known as Pichon Baron) is a winery in the Pauillac appellation in the Bordeaux region of France. Château Pichon Longueville Baron is also the name of the red wine produced by the winery. The wine produced here was listed as one of fifteen Second Growths in the original official classification of Bordeaux wines in 1855.
The history of this legendary winery can be traced back to the late 17th century. In 1689, an influential wine merchant, Pierre Desmezures de Rauzan, bought some plots near Chateau Latour. In 1694, Pierre's daughter Therese married Baron Jacques Pichon de Longueville as Therese's dowry, and the ownership of these plots was changed to Jacques Pichon de Longueville Baron Jean Longueville, the Domaine de Pichon Longueville (Domaine de Pichon Longueville) also came into being.
In 1850, the Pichon Longueville estate was divided into two, and the part inherited by his daughter formed the current Chateau Pichon-Longueville-Comtesse-de-Lalande, which was inherited by his son The part that is now the baron's castle.
After being under the control of the Pichon family for more than two centuries, the Baron Castle was acquired by the Bouteiller family in 1933. After more than 50 years of prosperity, the chateau changed hands again and was acquired by the French insurance company in 1987. The Baron Pichon estate covers 75 hectares of fine gravel soil. This unique soil, low in nutrients and without excess moisture, supports vines of different varieties with an average age of 35 years.
Pichon Baron's expansive vineyard is composed of 66% Cabernet Sauvignon, 28% Merlot, 5% Cabernet Franc and 1% Petit Verdot, with plots carefully divided. Each plot is shaped like a piece of gold, thanks to precise machining adapted to its contours.
On arrival in the cellar, the grapes are placed in barrels. Vinification is a critical moment that extends the scope of the winemaker's work and reveals the unique expressiveness of the wine.
The winemaking process involves a complex maceration process between the skins and pulp of the grapes. Fermentation will result in the conversion of sugars to alcohol, the dissolution of tannins and colors, and the emergence of aromatic compounds. The process lasts three to four weeks, but the success of the wine depends on the individual following the process closely.
At the end of the malolactic fermentation, at the time of bottling, wine is made from different wine selections. In dark cellars the wine continues to mature in wooden barrels. Periodically, every 3 to 4 months, an aging by candlelight is carried out in the traditional manner in order to separate the wine from the sediment.
