The aroma of chili peppers was irresistible the moment it arrived. The cod wasn't overly dry or tough; the skin was crispy and the flesh tender.
The spicy aroma of the chili peppers was addictive. I paired this dish with Luciano Arduini Amarone.
The sweetness of the dried wine helped to balance the spiciness. Because the dish was so flavorful, the strong fruitiness of the Amarone didn't overpower the taste of the food at all. After eating, I wanted to drink more, and after drinking more, I wanted to eat more!
Luciano Arduini's DOCG Classico Amarone uses grapes from designated regions—Corvina, Corvinone, Rondinella, and Molinara—harvested within the first 20 days of September. The blend is made from grapes grown within these regions in specified proportions to preserve sugar and acidity, and the grapes are entirely air-dried. 40% of the water is extracted from the grapes; this method aims to effectively increase the grape's concentration while preserving its sugar content.
Winemaking Process: After the grapes are harvested at their ripest in autumn, they are destemmed and lightly pressed, followed by maceration for 45 days. During this period, hand-watering and racking are performed, and fermentation takes place at a temperature of 10°C-20°C. The wine is then transferred to barrels and subsequently placed in large Slavonian oak barrels. After approximately 24 months of aging, the wine is further aged in the bottle.
DOCG level Amarone
DOCG (Denominazione di Origine Controllatae Garantita): This refers to premium wines from a designated Origin region, the highest level in Italian wine classification. Wines at this level must be bottled and sold in bottles with a capacity of less than 5 liters, and must have an officially coded label on the cork. Furthermore, the highest quality regions within the DOC category are selected for further certification, subjecting them to even stricter regulations on wine production and labeling. Wine merchants must produce wines within specific regions, using designated grape varieties, winemaking methods, and aging processes, all in compliance with relevant laws and regulations, to be eligible for the DOCG designation.
Valpolicella is a wine region located in northern Italy, within the Veneto appellation, northwest of Verona, at the foot of the Alps. The region covers 240 square miles. At an altitude of 1,300 feet, the soil is primarily composed of calcium-rich limestone and clay, ideal for grape cultivation. Wines are mainly made from four local varieties: Corvina, Rondinella, Corvinone, and Molinara.
When the regulations for the Valpolicella region stipulate that red wines labeled "Valpolicella DOC" must contain 45%-69% Corvina, Corvinone can sometimes be used as a substitute, but its proportion cannot exceed 50%. Rondinella, on the other hand, must comprise 5% to 30% of the blend. Among these varieties, Corvinone often imparts a wonderful cherry flavor to the wine; Rondinella provides rich floral aromas; and while Molinara is used less frequently in recent years, it provides acidity support.
