Appassimento is a ancient Italian winemaking technique where the bunches of grapes are left whitering on the vine to concentrate primaries aromas in the berries. After, the grapes are selected and harvested only by hand and vinified following the principles of red wine winemaking process.
Very rich and succulent, with a balanced fruit power. Authentic riped cherry finish with a nice liquorice flavour. There's a lot to like here-it's a big wine, but in good balance and without confected flavour.

This kind of drink is sweet and full-bodied, and it has a ripe fruit flavor like Jam, but the practice behind it is simple. This winemaking method called "Appassimento" can be a wisdom for survival in the face of adversity. In regions with cold climates and insufficient sunlight, it is not easy to grow ripe grapes. Many wine-growing regions therefore simply give up red wine production, specializing in white wine. Chablis in Burgundy is an example. Puglia is reluctant to be controlled by the natural environment.
