Four classifications of sake | Kaoru, refreshing, mellow and ripe | Wine Time

Wine lovers must have heard of classifications such as "Daiginjo" and "Junmai sake", but in fact, according to the taste and style of sake, there are four major classifications of "sweetened, refreshing and mellow".

1. Smoked wine (くんしゅ)

 

It has a high aroma of "fruit" and "flower", such as cantaloupe, apple, white flower, etc. Usually the taste is relatively refreshing, suitable for drinking at a slightly lower temperature.

Mainly based on Ginjo wine, which is also the type that ladies like to drink~

2. Refreshing wine (そうしゅ)

 

As the name suggests, it is a light and refreshing type of wine, which is often linked with the word "Danli". The personality is not strong, it is easy to take with meals, suitable for cold drinking.

3. Wine (じゅんしゅ)

 

It has a rich aroma of cooked rice, umami taste (that is, umami taste), and a thicker taste. In addition to drinking at room temperature, it is also very suitable for heating to enjoy the taste. Mainly pure rice wine and raw wine.

4. Cooked wine (じゅくしゅ)


After aging, the sake will turn darker (yellow or brown) and begin to develop a unique rich flavor. It is often described as having a taste similar to "Shaoxing wine", and the taste is quite rich. On the wine label, you will see the marks of "Ancient Wine", "Secret Wine", and "Matured in X Years".
