Drinkers who have drank Japanese whiskey must have heard of "Yamazaki Distillery". Yamazaki Distillery Yamazaki is one of the most famous whiskey brands in Japan. Built in 1923, Yamazaki Kiukoku is located in the Yamazaki Gorge at the foot of Tenno Mountain in Kyoto, the ancient capital of Japan. It is the originator of Japanese whiskey and the flagship brand of Suntory, a long-established Japanese company. It has been sold to many countries around the world.

History Background

Yamazaki Distillery belongs to Japan's Suntory Group. It was built in 1923 by Shinjiro Torii, the founder of Suntory. It is Japan's first malt whiskey distillery and is dedicated to producing Japanese domestic whiskey. Since then, Yamazaki Distillery has created the history of Japanese whiskey, starting with the first batch of domestic whiskey "Shirasa", and subsequently launched many whiskeys such as "Suntory Whiskey Kakubo" and "Suntory Old Whiskey".

Yamazaki Distillery began by learning to make whiskey in the traditional Scottish style. However, there are many distilleries in each region of Scotland, so many whiskey brands choose to blend whiskeys produced by various distilleries to launch blended whiskeys. However, in addition to blended whiskey, Yamazaki Distillery also produces Japan's first single malt whiskey, which is also its most famous product. The water source used in the brewery is of excellent quality and is "Rikyu no water", which is rated as one of the top 100 famous waters in the country. It is said to be the water source used by the Japanese tea saint Sen no Rikyu.

Yamazaki Whisky

In 1984, Suntory decided to launch single malt whiskey with the belief of "creating world-class Japanese whiskey with Japanese hands". After spending more than two years in research and development with chief blender Miki Sato, Saji Keizo, who was full of confidence, launched this single malt whiskey. The whiskey was named after the distillery's namesake "Yamazaki". When it was launched in March 1984, the age of the whiskey was not indicated on the label. It was not officially changed to "Yamazaki 12 Years Old" in 1986. Later, "Yamazaki 18 Years Old", "Yamasaki 10 Years Old" and "Yamasaki 25 Years Old" were launched successively from 1992 to 1998.

Unlike other countries, which generally use American oak barrels and sherry barrels to age whiskey, Yamazaki specifically uses Mizunara oak barrels. It is made from trees that grow in the cold regions of Hokkaido and are 200 years old or more. The wine has aromas of agarwood, sandalwood, vanilla and coconut. Many wine critics believe it has aromas similar to the incense sticks and incense used in Japanese shrines and temples. Due to the scarcity of trees, the original cost was extremely high. Therefore, the entire Suntory Group can only obtain 100 new Mizunara barrels a year.

Plum wine

The plum wine produced in Yamazaki is also popular for its whiskey flavor. In addition to the basic plum wine, annual limited editions are launched every year, which is a product that drinkers are passionate about. Combining over a hundred years of brewing technology and mixing techniques, the use of plums has been improved, and the plum aroma is richer. After aging in whiskey barrels, it brings a unique and layered woody aroma. Adding the aroma of whiskey, the quality of plum wine is even higher. Using 100% Japanese plum wine, brandy is added to make the plum wine aroma richer, and the sugar content is reduced to make the taste refreshing, achieving the perfect combination of the gorgeous aroma and rich taste of plum wine.
