The vineyards of Oliver Winery have excellent terroir. The soil composition here is relatively complex, mainly a mixture of Gonzian gravel and limestone clay, and also contains quartz, chert, flint and other soils. The winery will cultivate suitable varieties according to the characteristics of these soils and local conditions. The winery has 60 hectares of vineyards, of which 52 hectares are used to grow red grape varieties, including Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot. (Petit Verdot), the average age of the vines is 20 years. The remaining 8 hectares are planted with white grape varieties, including Sauvignon Blanc, Semillon and Muscadelle. In recent years, in order to tap the potential of the vineyard's terroir to a greater extent, the technical team of Oliver Winery has conducted precise geological surveys of the vineyards and gained a deeper understanding of the terroir. Red wine is brewed in temperature-controlled stainless steel vats. Lactic acid fermentation takes place in tanks. The wine is aged on average in 30% new French oak barrels for 12 to 14 months.
White wine – 33% of white wine grapes require skin maceration before fermentation. Fermented in stainless steel barrels and aged in French oak barrels. White wines are aged on the lees for nine months before being bottled.
The average annual production of the winery is nearly 20,000 cases of red Bordeaux wine and 3,000 cases of white Bordeaux wine.
