Château Olivier 酒莊介紹:
Château Olivier (奧利弗酒莊)位於法國波爾多內既Graves (格拉夫)產區，距離著名的波爾多市僅有11公里之遠。Château Olivier是一個很古老的酒莊，其城堡被認為是當地歷史的紀念碑，仍遺留下中世紀早期的痕跡。酒莊從19世紀就屬於一個波爾多的Bethmann家族（貝特曼家族）。1867年，Alexandre de Bethmann（亞歷山大·德·貝特曼）當選為波爾多市長。從那時起，他的家族購買了Château Olivier ，酒莊至今仍由該家族的後裔掌管。Bethmann家族現將酒莊的領導權交給了由Laurent Lebrun先生(農學家和葡萄酒工藝學家)。在1953年，Château Olivier 的紅酒和白酒均被評為🏵列級葡萄酒。

Graves格拉夫分級制度:
在波爾多，Graves 格拉夫分級制度分為3個等級，其中只有16間酒莊被分級為Graves Grand Cru Classé (格拉夫列級酒莊)，而且全部來自Graves北部的精英分級-Appellation Pessac-Léognan，Château Olivier 是少數酒莊中紅酒同白酒都被分級為Graves Grand Cru Classé，這分級的紅酒指定葡萄有Merlot、Cabernet Sauvignon、Cabernet Franc為主，白酒的指定葡萄有Sémillon、Sauvignon、Muscadelle。 格拉夫分級制度另設有 Appellation Graves Controlée - 針對附合當地標準的紅酒和不甜白酒的標示，Appellation Graves Supérieures - 針對甜白酒的標示。

見到以上幾位國際酒評家俾到甘高分(90-94分)既評價，相信大家都感受2016年Château Olivier Blanc的優秀品質，亦都感受到Graves既精英法定產區Pessac-Léognan白酒既品質保證。Château Olivier 採用左剪枝法管理葡萄樹，以人工採收葡萄後，先在葡萄田進行一般篩選，然後再係酒窖再次進行逐串挑選。係釀造白酒時，酒莊對白葡萄採用帶皮浸漬，然後係橡木桶（1/3為新桶）中發酵，不過濾陳釀12個月。除左葡萄經過嚴謹篩選之外，Pessac-Léognan白酒品質遠遠超越一般波爾多普通白酒，主要原因係釀酒過程中多數唔會進行乳酸發酵，以保有足夠既酸度，甘樣釀造既白酒既可以係年輕時飲用，感受新鮮水果同花香，同時，亦可以陳存多年後品嘗、感受陳年變化後既複雜味道同層次。
